When I first met Matteo Bologna, I ribbed him for using ATF Americana in the identity for Balthazar. He’s forgiven me, and we’ve since collaborated on a few projects. When he asked for assistance with a new series for Keith McNally’s latest restaurant, we jumped at the chance.
